Nacho Potato Soup

This is a Weight Watcher's recipe, from a meeting sometime last fall, maybe before Thanksgiving.

1 package augratin potato mix
1 can Rotel
1 can corn with liquid
4 oz light Velveeta
2 c fat free milk
2 c water

Combine ingredients in crock pot. Cook on medium until cheese is melted and potatoes are done.

Makes 6 cups; 1 cup = 3.5 points

When I wrote down this recipe, the only directions I wrote were, "cook, medium, until potatoes are done." I attempted to do this on the stove, and the soup cooked to the bottom of the pan. Next time I try this in a sauce pan, I'll do everything except the cheese and milk until the potatoes are done, then add the milk and cheese, cooking over low heat until cheese is melted.

Or, I might nuke it.

At any rate, it's like eating Rotel dip soup, and it's so rich it sticks with you for a long time. As we were having lunch, we discussed adding onions, sausage, ham, or serving with tortilla chips. Of course, the point value will suffer, but just a little reduced fat sausage wouldn't do that much harm, right?
